Ingredients

  • 1 cup old-fashioned rolled oats
  • 1 cup milk of choice
  • 1/2 cup plain Greek yogurt
  • 1 large ripe peach, finely diced
  • 2 tbsp peach preserves
  • 1 tbsp chia seeds
  • 1 tbsp honey
  • 1/2 tsp vanilla extract
  • 1/4 tsp ground cinnamon
  • 1 pinch pinch of salt
  • 1/4 cup toasted pecans, chopped
  • 1/2 peach extra peach slices for topping

Instructions

  1. 1In a mixing bowl or large measuring cup, stir together the oats, milk, Greek yogurt, chia seeds, honey, vanilla, cinnamon, and salt until fully combined.
  2. 2Fold in most of the finely diced peach and the peach preserves so fruity pockets run through the mixture.
  3. 3Divide the oat mixture evenly between two jars or lidded containers, tapping gently so no dry pockets remain.
  4. 4Press a piece of plastic wrap or the lids firmly on top and refrigerate at least 6 hours or overnight so the oats soften and thicken.
  5. 5In the morning, give each jar a good stir; if the oats seem too thick, loosen with a splash of cold milk until creamy and spoonable.
  6. 6Taste and add a touch more honey if you want extra sweetness to match the peaches.
  7. 7Top each serving with the remaining diced peach, fresh peach slices, and toasted pecans for crunch.
