Ingredients
- 1 cup rolled oats
- 2 medium ripe pears
- 1/3 cup cooked peeled chestnuts
- 1/2 cup plain Greek yogurt
- 1 cup whole milk
- 2 Tbsp honey
- 1/2 tsp ground cardamom
- 1/2 tsp vanilla extract
- 1 Tbsp chia seeds
- 1 pinch pinch of salt
Instructions
- 1Core one pear and grate it on the large holes of a box grater so it releases juice into the oats.
- 2Dice the second pear into small cubes and set aside for topping in the morning.
- 3Finely chop the cooked chestnuts so they soften slightly overnight in the liquid.
- 4In a medium bowl or two jars whisk together the milk, yogurt, honey, cardamom, vanilla, and salt until smooth.
- 5Stir in the rolled oats, chia seeds, grated pear, and most of the chopped chestnuts until fully combined.
- 6Divide the mixture evenly between two jars or containers, pressing down lightly so everything is submerged.
- 7Cover and refrigerate for at least 6 hours or overnight so the oats hydrate and the flavors meld.
- 8In the morning give each jar a quick stir; if the mixture is thicker than you like, loosen with a splash of milk.
- 9Top with the reserved fresh diced pear and remaining chestnut pieces.
- 10Add an extra light drizzle of honey if desired for shine.
- 11Eat cold straight from the jar or let sit at room temperature for 10 minutes to take the chill off.
- 12The oats keep well for up to 2 days, making them ideal for busy weekday mornings.
