Ingredients

  • 1 lb parsnips
  • 1/2 small yellow onion
  • 2 large eggs
  • 1/3 cup all-purpose flour
  • 1/2 tsp baking powder
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 12 fresh sage leaves
  • 4 tbsp unsalted butter
  • 1 tbsp olive oil
  • 1/2 cup Greek yogurt or sour cream
  • 2 tbsp snipped fresh chives
  • for serving lemon wedges

Instructions

  1. 1Peel the parsnips and grate them on the large holes of a box grater into a clean kitchen towel.
  2. 2Wring the grated parsnip firmly over the sink to squeeze out as much liquid as possible; this keeps the pancakes crisp instead of soggy.
  3. 3Finely grate or mince the onion and add it to the drained parsnip in a mixing bowl.
  4. 4Crack in the eggs, then sprinkle on the flour, baking powder, salt, and pepper. Mix until a cohesive batter forms that holds together when pressed.
  5. 5Set a large cast-iron or nonstick skillet over medium heat and add half the butter with the olive oil.
  6. 6When the fat is hot and shimmering, drop generous spoonfuls of batter into the pan and gently flatten each into a 3-inch round.
  7. 7Cook the pancakes 3 to 4 minutes per side until deep golden brown and crisp at the edges; transfer to a warm plate and repeat with remaining batter, adding a little more butter if the pan looks dry.
  8. 8In the same skillet melt the remaining butter over medium-low heat. Add the sage leaves and cook 1 to 2 minutes until the leaves turn dark green and crisp and the butter smells nutty.
  9. 9Plate stacks of the hot parsnip pancakes, spoon the sage butter and crisp leaves over the top, and add a dollop of yogurt.
  10. 10Scatter snipped chives and serve with lemon wedges for a bright squeeze just before eating.
