Ingredients
- 2 medium crisp apples
- 1 cup old-fashioned rolled oats
- 1 cup all-purpose flour
- 2 tsp baking powder
- 1 tsp ground cinnamon
- 1/4 tsp salt
- 2 large eggs
- 1 1/4 cups whole milk
- 3 tbsp maple syrup
- 1 tsp vanilla extract
- 3 tbsp unsalted butter
- 1 tsp fresh lemon juice
- 2 tbsp neutral oil or extra butter for griddle
Instructions
- 1Wash, core, and grate the apples on the large holes of a box grater, leaving the skin on for color and fiber. Toss the grated apple with the lemon juice in a small bowl so it stays bright and does not brown.
- 2In a large mixing bowl whisk together the oats, flour, baking powder, cinnamon, and salt until evenly combined.
- 3In a separate bowl beat the eggs, then whisk in the milk, maple syrup, and vanilla until smooth.
- 4Pour the wet mixture into the dry ingredients and stir gently just until no dry pockets remain; the batter will be thick and slightly lumpy. Fold in the grated apple and any juices.
- 5Let the batter rest 5 minutes so the oats hydrate and the baking powder activates; the mixture will thicken a little more.
- 6Heat a large nonstick skillet or griddle over medium heat (about 350°F surface temperature) and brush lightly with oil or melted butter.
- 7Scoop batter per pancake onto the hot surface, spacing them apart. Cook 2 to 3 minutes until bubbles form across the top and the edges look set and lightly golden.
- 8Flip carefully and cook another 1 1/2 to 2 minutes until the second side is deep golden and the center springs back when lightly pressed.
- 9Transfer finished pancakes to a warm plate and tent loosely with foil. Wipe the pan if needed, add a little more fat, and continue with the remaining batter.
- 10Serve stacked warm with butter melting on top and an extra drizzle of maple syrup if desired. The apple pieces should taste tender-sweet and the oats give a hearty chew.
