Ingredients

Instructions
- 1Crack the eggs into a medium bowl, add the milk, sea salt, and black pepper, and whisk vigorously for a full minute until the mixture is pale, frothy, and uniform.
- 2Warm a ten-inch nonstick skillet over medium-low heat and add half the butter, tilting the pan so it melts into a thin glossy film.
- 3Pour in half the egg mixture and let it sit undisturbed for twenty seconds until the edges just begin to set.
- 4With a silicone spatula, gently push the cooked edges toward the center while tilting the pan so uncooked egg flows underneath; repeat this motion slowly the pan.
- 5When the surface is still slightly glossy but mostly set, scatter half the chives, parsley, cheese, spinach, and tomato halves across one half of the omelette.
- 6Fold the bare half over the filling with the spatula, then slide the omelette onto a warm plate; tent loosely with a clean cloth.
- 7Wipe the skillet clean, add the remaining butter, and repeat the same gentle cooking and folding process with the second half of the eggs and remaining fillings.
