
Grilled Peach Ricotta Toast

Ingredients
- 3 medium ripe peaches
- 4 slices thick-sliced sourdough bread
- 1 cup whole-milk ricotta
- 3 tbsp honey
- 1 tbsp fresh thyme leaves
- 2 tbsp olive oil
- 1/2 tsp flaky sea salt
- 1/4 tsp black pepper
- 1/4 cup toasted pecans, roughly chopped
- 1 tsp lemon zest
Instructions
- 1Preheat a gas or charcoal grill to medium-high heat, about 400°F, and oil the grates lightly so the fruit and bread do not stick. Halve the peaches, remove the pits, and brush the cut sides with olive oil.
- 2Place peaches cut-side down on the hot grill. Grill without moving for 3 to 4 minutes until deep grill marks appear and the flesh softens and caramelizes at the edges. Flip briefly for 1 minute on the skin side, then transfer to a cutting board.
- 3Brush both sides of the sourdough slices with the remaining olive oil. Grill the bread 1 to 2 minutes per side until golden with light char marks and a crisp exterior but still soft inside.
- 4While the bread grills, stir the ricotta in a small bowl with the lemon zest, half the thyme, black pepper, and honey until creamy and lightly sweetened.
- 5Slice the grilled peaches into thick wedges, discarding any overly charred bits. Taste one wedge—if peaches are very tart, drizzle them lightly with a little extra honey.
- 6Spread each grilled toast generously with the seasoned ricotta, going all the way to the edges so every bite is creamy.
- 7Arrange peach wedges over the ricotta in a slightly overlapping pattern. Drizzle the remaining honey over the peaches and toast.
- 8Scatter toasted pecans and the rest of the fresh thyme on top. Finish with flaky sea salt and a final grind of black pepper. Serve immediately on a large board so guests can grab a toast while still warm.
