Grape Chia Overnight Oats

Ingredients

  • 1 1/4 cups seedless green or red grapes
  • 1 cup rolled oats
  • 3 tbsp chia seeds
  • 1 1/2 cups milk of choice
  • 1/2 cup plain yogurt
  • 2 tbsp maple syrup
  • 1/2 tsp vanilla extract
  • 1 tsp lemon zest
  • 3 tbsp chopped pistachios
  • 6 fresh basil leaves
  • 1 pinch pinch of salt

Instructions

  1. 1Rinse the grapes, pat dry, and halve most of them so their juices can mingle with the oats overnight.
  2. 2In a medium bowl or two jars combine the rolled oats, chia seeds, milk, yogurt, maple syrup, vanilla, lemon zest, and salt.
  3. 3Stir thoroughly so every oat is coated and the chia is evenly distributed with no dry clumps.
  4. 4Fold in two-thirds of the halved grapes, reserving the rest for topping in the morning.
  5. 5Divide the mixture between two jars or containers, seal, and refrigerate at least 6 hours or overnight until thick and creamy.
  6. 6In the morning give the oats a quick stir; if they seem too thick, loosen with a splash of milk.
  7. 7Spoon the reserved fresh grape halves over the top of each jar.
  8. 8Roughly chop the pistachios and tear the basil leaves, then scatter both over the grapes for crunch and herbal brightness.
  9. 9Taste and add an extra drizzle of maple only if needed, then serve cold straight from the jar or spooned into a bowl.
