
Grape & Apple Overnight Oats

Ingredients
- 2 cups old-fashioned rolled oats
- 2 cups unsweetened almond milk
- 1 cup plain Greek yogurt
- 2 tablespoons chia seeds
- 3 tablespoons honey
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1 pinch pinch of salt
- 2 cups fresh red grapes
- 1 large crisp apple (Honeycrisp or Gala)
- 1 teaspoon lemon juice
- 1/4 cup toasted sliced almonds
- 2 tablespoons fresh mint leaves
Instructions
- 1In a large mixing bowl, combine the rolled oats, almond milk, Greek yogurt, chia seeds, honey, vanilla extract, cinnamon, and salt. Stir thoroughly until the mixture looks evenly creamy and no dry oat pockets remain.
- 2Halve the fresh grapes and set aside three-quarters of them for layering; reserve the rest for morning topping.
- 3Core the apple and dice it into small bite-size pieces. Toss the diced apple immediately with the lemon juice so it stays bright and does not brown.
- 4Spoon a layer of the oat mixture into each of four jars or containers, filling them one-third full.
- 5Add a layer of halved grapes and some of the lemon-tossed apple dice on top of the oats.
- 6Repeat with another layer of oats followed by more fruit until the jars are nearly full, finishing with a thin oat layer on top so the fruit stays submerged and softens overnight.
- 7Seal the jars and refrigerate for at least 6 hours or overnight so the oats absorb the liquid and the chia gels.
- 8In the morning, give each jar a gentle stir. Top with the reserved fresh grape halves, a sprinkle of toasted sliced almonds, and torn mint leaves.
- 9Taste and drizzle a little extra honey if you want more sweetness. Serve chilled straight from the jar or spoon into a bowl.
- 10If the oats seem too thick after chilling, loosen with a splash of almond milk before adding the final toppings.
