Ingredients

  • 2 cups old-fashioned rolled oats
  • 2 cups unsweetened almond milk
  • 1 cup plain Greek yogurt
  • 2 medium crisp apples
  • 2 tbsp chia seeds
  • 3 tbsp maple syrup
  • 1 1/2 tsp ground cinnamon
  • 1 tsp vanilla extract
  • 1 pinch of fine salt
  • 1/3 cup chopped toasted walnuts
  • 1 tsp fresh lemon juice

Instructions

  1. 1Wash and core the apples, then dice them into small bite-size pieces; toss the pieces lightly with lemon juice so they stay bright.
  2. 2In a large mixing bowl combine the rolled oats, chia seeds, cinnamon, and salt, stirring until the dry ingredients look evenly distributed.
  3. 3Add the almond milk, Greek yogurt, maple syrup, and vanilla extract to the bowl and whisk until the mixture is smooth and creamy with no dry pockets of oats.
  4. 4Fold most of the diced apples into the oat mixture, reserving a small handful for topping later.
  5. 5Divide the mixture evenly among four jars or meal-prep containers, packing it down gently so the liquid covers the oats.
  6. 6Scatter the reserved apple pieces and chopped toasted walnuts over the top of each jar.
  7. 7Seal the jars and refrigerate them for at least 6 hours or overnight so the oats soften and the flavors meld.
  8. 8In the morning give each jar a quick stir; if the oats seem thick, loosen with a splash of cold almond milk.
  9. 9Serve chilled straight from the jar or transfer to a bowl; the texture should be creamy and spoonable with tender apple bits throughout.
  10. 10For a weekend brunch board, line the jars up with spoons so guests can grab and go.
