Ingredients

  • 10 slices cinnamon raisin bread
  • 6 large eggs
  • 2 cups whole milk
  • 1/2 cup heavy cream
  • 1/3 cup granulated sugar
  • 1 1/2 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 2 cups fresh mixed berries
  • 2 tbsp unsalted butter
  • 2 tbsp powdered sugar for dusting
  • 1/2 cup maple syrup for serving

Instructions

  1. 1Butter a 9x13-inch baking dish thoroughly and set it aside while you prep the bread and custard.
  2. 2Cut the cinnamon raisin bread into 1-inch cubes, keeping the crusts for structure and concentrated spice.
  3. 3Scatter half the bread cubes across the bottom of the dish in an even layer.
  4. 4Sprinkle half the fresh berries over the bread so some nestle into the gaps.
  5. 5Add the remaining bread cubes on top, then finish with the rest of the berries pressed lightly into the surface.
  6. 6In a large bowl whisk the eggs until blended, then whisk in milk, cream, sugar, vanilla, and cinnamon until the sugar dissolves.
  7. 7Pour the custard slowly over the entire strata, pausing once to press any dry cubes down so everything is moistened.
  8. 8Cover the dish tightly and refrigerate at least 1 hour or overnight so the bread fully hydrates and the flavors marry.
  9. 9When ready to bake, preheat the oven to 350°F and remove the strata from the fridge while the oven heats.
  10. 10Bake uncovered 45 to 50 minutes until the top is puffed and golden, the center is set, and berries are bubbling at the edges.
