Ingredients

  • 1 1/2 cups all-purpose flour
  • 2 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/2 tsp kosher salt
  • 2 large eggs
  • 1 1/4 cups whole milk
  • 3 Tbsp unsalted butter, melted
  • 2 Tbsp plus more for serving maple syrup
  • 6 oz cremini mushrooms
  • 1 large Honeycrisp apple
  • 1 tsp fresh thyme leaves
  • 1 Tbsp olive oil
  • 2 Tbsp chopped fresh parsley
  • 1/4 tsp black pepper

Instructions

  1. 1In a large bowl whisk together the flour, baking powder, cinnamon, and salt until evenly combined.
  2. 2In a separate bowl beat the eggs, then whisk in the milk, melted butter, and maple syrup until smooth. Pour the wet mixture into the dry ingredients and stir gently just until no dry streaks remain; a few lumps are fine. Rest the batter 5 minutes.
  3. 3Meanwhile, finely chop the mushrooms and grate the apple on the large holes of a box grater, squeezing out excess liquid from the apple.
  4. 4Heat a nonstick griddle or large skillet over medium heat and brush lightly with olive oil. Fold the chopped mushrooms, grated apple, thyme, and black pepper into the rested batter.
  5. 5Scoop 1/4-cup portions of batter onto the hot surface, spacing them apart. Cook 2–3 minutes until bubbles form across the surface and the edges look set and lightly golden.
  6. 6Flip carefully and cook another 1 1/2–2 minutes until the undersides are golden brown and the centers spring back when lightly pressed.
  7. 7Transfer finished pancakes to a warm plate and repeat with remaining batter, brushing the pan with a little more oil as needed.
  8. 8Stack three pancakes per plate, drizzle lightly with maple syrup, and finish with a sprinkle of chopped parsley for a bright herbal note. Serve right away.
