Ingredients

  • 1 cup all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 5 large eggs
  • 1 cup granulated sugar
  • 2 tsp vanilla extract
  • 1/3 cup whole milk
  • 12 oz evaporated milk
  • 14 oz sweetened condensed milk
  • 1 1/2 cups heavy whipping cream
  • 2 tbsp powdered sugar

Instructions

  1. 1Preheat oven to 350°F (175°C). Grease and flour a 9x13-inch baking pan.
  2. 2In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. 3Separate the egg yolks and whites into two large bowls.
  4. 4Beat the egg yolks with granulated sugar on high speed until pale and fluffy, about 3 minutes. Stir in vanilla and the whole milk.
  5. 5Gently fold the flour mixture into the yolk mixture until just combined.
  6. 6In a clean bowl, beat the egg whites on high speed until soft peaks form. Gradually add the remaining granulated sugar and continue beating until stiff peaks form.
  7. 7Carefully fold the egg whites into the batter until no streaks remain. Pour into the prepared pan.
  8. 8Bake for 25-30 minutes until a toothpick inserted in the center comes out clean. Cool completely in the pan.
  9. 9In a large measuring cup or bowl, whisk together the evaporated milk, sweetened condensed milk, and heavy cream. Set aside.
  10. 10Poke the cooled cake all over with a fork. Slowly pour the milk mixture over the cake, allowing it to soak in. Refrigerate for at least 4 hours or overnight.
  11. 11In a chilled bowl, whip the remaining heavy cream with the powdered sugar and vanilla until stiff peaks form.
  12. 12Spread the whipped cream evenly over the top of the chilled cake. Slice and serve.
