
Tres Leches Cake

Ingredients
- 1 cup all-purpose flour
- 1 1/2 tsp baking powder
- 1/4 tsp salt
- 5 large eggs
- 1 cup granulated sugar
- 2 tsp vanilla extract
- 1/3 cup whole milk
- 12 oz evaporated milk
- 14 oz sweetened condensed milk
- 1 1/2 cups heavy whipping cream
- 2 tbsp powdered sugar
Instructions
- 1Preheat oven to 350°F (175°C). Grease and flour a 9x13-inch baking pan.
- 2In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
- 3Separate the egg yolks and whites into two large bowls.
- 4Beat the egg yolks with granulated sugar on high speed until pale and fluffy, about 3 minutes. Stir in vanilla and the whole milk.
- 5Gently fold the flour mixture into the yolk mixture until just combined.
- 6In a clean bowl, beat the egg whites on high speed until soft peaks form. Gradually add the remaining granulated sugar and continue beating until stiff peaks form.
- 7Carefully fold the egg whites into the batter until no streaks remain. Pour into the prepared pan.
- 8Bake for 25-30 minutes until a toothpick inserted in the center comes out clean. Cool completely in the pan.
- 9In a large measuring cup or bowl, whisk together the evaporated milk, sweetened condensed milk, and heavy cream. Set aside.
- 10Poke the cooled cake all over with a fork. Slowly pour the milk mixture over the cake, allowing it to soak in. Refrigerate for at least 4 hours or overnight.
- 11In a chilled bowl, whip the remaining heavy cream with the powdered sugar and vanilla until stiff peaks form.
- 12Spread the whipped cream evenly over the top of the chilled cake. Slice and serve.
