Mango Lassi

Ingredients

  • 2 large (about 2 cups chopped) ripe mangoes
  • 2 cups plain full-fat yogurt
  • 1/2 cup cold whole milk
  • 3 tbsp sugar
  • 1/4 tsp ground cardamom
  • 8-10 ice cubes
  • 2 tbsp (finely chopped, for garnish) pistachios
  • 4 leaves (for garnish) fresh mint leaves

Instructions

  1. 1Peel and chop the large ripe mangoes, discarding the pits. You should have mango flesh.
  2. 2In a blender, add the chopped mango, plain full-fat yogurt, cold whole milk, sugar, and ground cardamom.
  3. 3Add 8-ice cubes to the blender.
  4. 4Blend on high speed for 45-60 seconds until the mixture is completely smooth and frothy. Taste and adjust sweetness with a bit more sugar if your mangoes are tart.
  5. 5If the lassi is too thick, add a splash more cold milk and blend briefly again.
  6. 6Pour the lassi evenly into 4 tall glasses.
  7. 7Sprinkle the finely chopped pistachios over the top of each glass for crunch and color.
  8. 8Garnish each serving with a fresh mint leaf.
  9. 9Serve immediately while cold and frothy. Best enjoyed right away as a dessert or refreshing drink.
