Garlic Butter Steak Bites

Ingredients

  • 1.5 lbs sirloin steak
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1 tbsp olive oil
  • 4 tbsp unsalted butter
  • 4 cloves garlic cloves
  • 2 tbsp fresh parsley
  • 1 tsp fresh thyme leaves

Instructions

  1. 1Pat the steak dry with paper towels and cut into 1-inch cubes.
  2. 2In a small bowl, combine kosher salt, black pepper, and garlic powder.
  3. 3Season the steak cubes evenly with the spice mixture.
  4. 4Mince the garlic cloves and chop the fresh parsley; set aside.
  5. 5Heat a large cast-iron skillet over medium-high heat for 2 minutes.
  6. 6Add the olive oil and swirl to coat the pan.
  7. 7Add the steak bites in a single layer (work in batches if needed) and sear undisturbed for 1 minute.
  8. 8Flip the bites and cook for another 1–2 minutes until browned on all sides but still pink in the center for medium-rare.
  9. 9Remove steak to a plate and reduce heat to medium.
  10. 10Add the butter to the skillet; once melted, stir in the minced garlic and thyme.
  11. 11Cook the garlic butter for 30–45 seconds until fragrant, then return the steak bites to the pan.
  12. 12Toss everything together for 30 seconds to coat in the garlic butter.
  13. 13Remove from heat, sprinkle with chopped parsley, and serve immediately.
