Ingredients

  • 14 oz extra-firm tofu
  • 1 cup (drained) canned chickpeas
  • 1/2 medium red onion
  • 3 garlic cloves
  • 1 1/2 tsp ground turmeric
  • 1 tsp ground cumin
  • 3/4 tsp smoked paprika
  • 3 cups (chopped) kale
  • 1 large avocado
  • 2 tbsp fresh lemon juice

  • 1/4 cup (chopped) fresh cilantro
  • 3/4 tsp kosher salt

Instructions

  1. 1Press and crumble the tofu into a bowl; set aside.
  2. 2Finely dice the red onion and mince the garlic cloves.

  4. 4Add crumbled tofu, turmeric, cumin, smoked paprika, salt, and black pepper. Cook, stirring, for 5 minutes until tofu begins to brown.
