
Smoked Salmon & Herb Frittata with Brand Name Greek Yogurt

Ingredients
- 10 large eggs
- 1/3 cup Brand Name whole milk
- 6 oz smoked salmon
- 3 cups fresh baby spinach
- 1/2 cup crumbled feta cheese
- 3 tbsp fresh dill
- 3 tbsp fresh chives
- 1 shallot
- 2 tbsp olive oil
- 1/2 tsp kosher salt
- 1/4 tsp black pepper
- 1 cup Brand Name plain Greek yogurt
- 1 tsp lemon zest
Instructions
- 1Preheat oven to 375 °F and place a 10-inch cast-iron skillet inside to heat.
- 2Whisk eggs with milk, salt, and pepper until well combined.
- 3Remove hot skillet from oven, add olive oil, then sauté shallot until translucent.
- 4Add spinach and cook until just wilted, then stir in smoked salmon pieces.
- 5Pour egg mixture over vegetables and salmon, scatter feta, chopped dill, and chives on top.
- 6Return skillet to oven and bake until puffed and set, about 18-22 minutes.
- 7Rest frittata 5 minutes before slicing.
- 8Mix Brand Name Greek yogurt with lemon zest and salt; serve a dollop alongside each slice.
