Smoked Salmon & Herb Frittata with Brand Name Greek Yogurt

Ingredients

  • 10 large eggs
  • 1/3 cup Brand Name whole milk
  • 6 oz smoked salmon
  • 3 cups fresh baby spinach
  • 1/2 cup crumbled feta cheese
  • 3 tbsp fresh dill
  • 3 tbsp fresh chives
  • 1 shallot
  • 2 tbsp olive oil
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • 1 cup Brand Name plain Greek yogurt
  • 1 tsp lemon zest

Instructions

  1. 1Preheat oven to 375 °F and place a 10-inch cast-iron skillet inside to heat.
  2. 2Whisk eggs with milk, salt, and pepper until well combined.
  3. 3Remove hot skillet from oven, add olive oil, then sauté shallot until translucent.
  4. 4Add spinach and cook until just wilted, then stir in smoked salmon pieces.
  5. 5Pour egg mixture over vegetables and salmon, scatter feta, chopped dill, and chives on top.
  6. 6Return skillet to oven and bake until puffed and set, about 18-22 minutes.
  7. 7Rest frittata 5 minutes before slicing.
  8. 8Mix Brand Name Greek yogurt with lemon zest and salt; serve a dollop alongside each slice.
