Ingredients

  • 4 ripe pears
  • pinch saffron threads
  • 1/2 cup warm white wine
  • 1/3 cup honey
  • 4 orange peel strips
  • 1 cup water
  • 2 tbsp lemon juice
  • 1 tbsp olive oil

Instructions

  1. 1Bloom the saffron threads in the warm white wine for 10 minutes.
  2. 2Halve and core the pears, toss them with lemon juice and olive oil, then arrange cut-side down in a baking dish.
  3. 3Combine the saffron wine, honey, water, and orange peel strips in a small saucepan, bring to a gentle boil, then pour the syrup over the pears.
  4. 4Roast in a 375°F oven for 30-35 minutes, basting occasionally, until the pears are tender and the syrup has reduced to a light syrupy consistency.
  5. 5Serve warm or at room temperature with a drizzle of the saffron syrup.
