
Sharp Cheddar and Apple-Butter Grilled Sandwich with Cider-Braised Onions

Ingredients
- 2 large yellow onions
- 1 cup apple cider
- 4 tbsp butter
- 8 slices sourdough bread
- 8 ounces sharp cheddar cheese
- 1/2 cup apple butter
- 2 tbsp dijon mustard
- 1/4 tsp salt
Instructions
- 1Slice the onions thinly then cook them in a skillet with butter and salt over medium-low heat for 10 minutes.
- 2Pour in the cider and continue cooking until the liquid is fully reduced and the onions are soft and caramelized about 15 minutes more.
- 3Spread the apple butter on four slices of bread and the dijon mustard on the remaining four slices.
- 4Layer the cheddar cheese and cider-braised onions between the slices to form sandwiches.
- 5Melt the remaining butter in a skillet over medium heat and grill each sandwich until the bread is toasted and the cheese is melted turning once.
- 6Cut the sandwiches in half and serve warm.
