Smoky Beef and Cranberry Hand Pies

Ingredients

  • 2 sheets (about 1 lb total) refrigerated pie crusts
  • 6 oz dried beef jerky
  • 3/4 cup dried cranberries
  • 1 medium yellow onion
  • 2 tsp smoked paprika
  • 3 tbsp rendered beef fat or butter
  • 1 tsp black pepper
  • 1 large egg

Instructions

  1. 1Preheat oven to 400°F and line a baking sheet with parchment paper.
  2. 2Finely chop the dried beef jerky and onion, then sauté them together in the rendered fat or butter with smoked paprika and black pepper for 6 minutes.
  3. 3Remove from heat, stir in the dried cranberries, and let the filling cool for 10 minutes.
  4. 4Cut each pie crust into 4 circles, spoon filling onto half of each circle, fold over, and crimp edges to seal.
  5. 5Brush the hand pies with beaten egg and bake for 22 minutes until golden and crisp.
