Soy-Glazed Mushroom and Cabbage Skillet

Ingredients

  • 8 dried shiitake mushrooms
  • 1 small head green cabbage
  • 4 scallions
  • 1-inch piece fresh ginger
  • 3 tbsp soy sauce
  • 2 tbsp sesame oil
  • 4 cups cooked white rice
  • 1 tbsp neutral oil
  • 1/2 tsp chili flakes

Instructions

  1. 1Soak dried shiitakes in hot water for 15 minutes; drain, reserve soaking liquid, and slice mushrooms.
  2. 2Heat neutral oil in a large skillet over medium-high heat; add sliced ginger and mushrooms and stir-fry 3 minutes.
  3. 3Add thinly sliced cabbage and chili flakes; cook 4-5 minutes until cabbage begins to wilt but still has bite.
  4. 4Pour in reserved mushroom liquid and soy sauce; simmer 3 minutes until the liquid reduces to a light glaze.
  5. 5Remove from heat, drizzle with sesame oil, scatter sliced scallions, and serve alongside warm rice.
