Soft Tofu Stew with Aged Kimchi

Ingredients

  • 14 oz package soft tofu
  • 1 1/2 cups jarred aged kimchi
  • 4 cloves garlic
  • 1 tbsp grated ginger
  • 2 tbsp gochugaru
  • 1 tbsp anchovy sauce
  • 1 tbsp toasted sesame oil
  • 2 cups chopped green cabbage
  • 2 cups water

Instructions

  1. 1Mince the garlic and grate the ginger. Squeeze the kimchi lightly, reserving its liquid.
  2. 2Heat toasted sesame oil in a medium pot over medium heat. Add garlic, ginger, and gochugaru; stir 30 seconds until fragrant.
  3. 3Add chopped green cabbage and squeezed kimchi. Cook 4 minutes, stirring occasionally.
  4. 4Pour in water, anchovy sauce, and reserved kimchi liquid. Bring to a boil, then reduce to simmer 8 minutes. Gently add soft tofu in large chunks and simmer 5 more minutes until heated through.
  5. 5Taste and adjust seasoning before serving steaming hot.
