Ingredients

  • 8 slices sourdough bread
  • 8 oz sharp cheddar cheese
  • 1 large yellow onion
  • 4 tbsp butter
  • 1 tbsp bacon fat
  • 1/4 tsp salt

Instructions

  1. 1Thinly slice the yellow onion. Cook in a cast-iron skillet with bacon fat and salt over medium heat until deeply browned and soft, about 10 minutes. Remove and set aside.
  2. 2Butter one side of each sourdough bread slice generously with the remaining butter.
  3. 3Assemble sandwiches by layering sharp cheddar cheese and cooked onions between two slices of bread with buttered sides facing out.
  4. 4Return skillet to medium heat. Cook each sandwich until golden brown and cheese is melted, about 4 minutes per side. Slice and serve hot.
