Ingredients
- 1.5 cups glutinous rice flour
- 0.75 cup water
- 0.25 cup sugar
- 1 cup canned sweetened red bean paste
- 0.5 cup potato starch
- 1 tbsp toasted sesame seeds
- 0.25 tsp flaky sea salt
Instructions
- 1In a microwave-safe bowl combine glutinous rice flour, water, and sugar then stir until smooth.
- 2Cover the bowl with plastic wrap and microwave on high for 2 minutes, stir thoroughly, then microwave another 2 minutes until the dough is translucent and elastic.
- 3Turn the hot mochi onto a surface dusted with potato starch, divide into 8 pieces, flatten each into a disc, and place a spoonful of sweetened red bean paste in the center of each.
- 4Pinch the edges closed to fully enclose the filling, roll lightly in more potato starch to prevent sticking, then sprinkle each piece with toasted sesame seeds and a tiny pinch of flaky sea salt before serving.
