- 3 tbsp low-sodium soy sauce
- 1 tbsp rice vinegar
- 2 tsp toasted sesame oil
- 1 tsp chili crisp or chili oil
- 2 cups vegetable broth
- 8 wrappers wonton wrappers cut into strips optional
- 4 small baby bok choy halved
- 1/4 tsp white pepper
Instructions
- 1Press the tofu between paper towels for a few minutes to remove excess water, then crumble it into small pieces resembling ground meat.
- 2Heat a large deep skillet or Dutch oven over medium-high heat. Add a light mist of oil if needed, then sauté the minced mushrooms until they release moisture and turn golden, about 4 minutes.
- 3Add the crumbled tofu, grated carrot, garlic, and ginger. Cook 3 to 4 minutes, stirring often, until the tofu edges lightly brown and smell toasty.
- 4Stir in the shredded napa cabbage and most of the green onions. Cook another 2 minutes until the cabbage wilts but still has a bit of crunch.
