- 2 (5 oz) cans canned tuna in water, drained
- 1 (15 oz) can canned cannellini beans, rinsed and drained
- 1 (15 oz) can canned chickpeas, rinsed and drained
- 1 medium English cucumber, diced
- 1 cup cherry tomatoes, halved
- 1/4 cup red onion, finely diced
- 1/3 cup fresh parsley, chopped
- 3 Tbsp fresh lemon juice
- 2 Tbsp extra-virgin olive oil
- 1 tsp Dijon mustard
- 1/2 tsp garlic powder
- 3/4 tsp kosher salt
- 1/2 tsp black pepper
- 1/4 tsp red pepper flakes
Instructions
- 1Drain the tuna thoroughly and flake it into a large mixing bowl with a fork so the pieces stay chunky rather than mashed.
- 2Rinse and drain the cannellini beans and chickpeas well, then add them to the bowl with the tuna.
- 3Dice the cucumber and halve the cherry tomatoes; add both to the bowl along with the finely diced red onion.
- 4Chop the parsley and scatter it over the salad base for brightness and color.
- 5In a small jar or bowl, whisk together the lemon juice, olive oil, Dijon mustard, garlic powder, salt, black pepper, and red pepper flakes until the dressing looks emulsified and glossy.
- 6Pour the dressing over the tuna-bean mixture and toss gently with a large spoon until every bean and flake is lightly coated.
