Ingredients

  • 4 large flour tortillas (10-inch)
  • 8 slices thick-cut bacon
  • 12 oz sliced roasted turkey breast
  • 2 ripe avocados
  • 1 tbsp lime juice
  • ⅓ cup mayonnaise
  • 1 tbsp Dijon mustard
  • ½ tsp garlic powder
  • 8 large romaine lettuce leaves
  • 1 large ripe tomato, thinly sliced
  • ¼ cup red onion, very thinly sliced
  • ½ tsp kosher salt
  • ¼ tsp black pepper
  • ½ cup shredded cheddar or Monterey Jack (optional)

Instructions

  1. 1Arrange the bacon slices in a single layer in a cold large skillet. Place over medium heat and cook, turning occasionally, 8–10 minutes until deeply browned and crisp. Transfer to a paper-towel-lined plate to drain.
  2. 2In a small bowl, mash the avocados with the lime juice, salt, and a few grinds of black pepper until mostly smooth but still a little chunky. In a second small bowl, stir together the mayonnaise, Dijon, and garlic powder.
  3. 3Warm the tortillas one at a time in a dry skillet over medium heat for 15–20 seconds per side until pliable, or wrap the stack in a damp paper towel and microwave 20–30 seconds.
  4. 4Lay each warm tortilla flat. Spread a thin, even layer of the garlic mayo across the center third, leaving a 1-inch border. Add a smear of mashed avocado on top of the mayo.
  5. 5Layer two romaine leaves down the center of each tortilla, followed by turkey slices folded or shingled neatly. Break bacon slices in half and arrange over the turkey.
  6. 6Top with 2–tomato slices, a few rings of red onion, a light sprinkle of remaining salt and pepper, and optional shredded cheese if using.
  7. 7Fold the bottom edge of the tortilla up over the filling, then fold in both sides snugly and roll tightly away from you to form a secure burrito-style wrap.
  8. 8If packing for later, wrap each roll tightly in parchment or foil and refrigerate up to 24 hours; the avocado stays greener thanks to the lime. Slice in half on a sharp diagonal just before eating.
  9. 9Serve chilled or at cool room temperature with pickle spears or chips. For extra crunch, add a few potato chips inside the wrap right before rolling.
