Ingredients
- 12 oz cooked chicken breast, diced
- 2 cups fresh sweet corn kernels
- 1/4 cup mayonnaise
- 1/4 cup sour cream or Greek yogurt
- 2 tbsp lime juice
- 1 tsp chili powder
- 1/2 tsp smoked paprika
- 1/2 tsp garlic powder
- 3/4 tsp kosher salt
- 1/3 cup cotija cheese, crumbled
- 1/4 cup fresh cilantro, chopped
- 4 large flour tortillas
- 2 cups shredded romaine or butter lettuce
- 1 tbsp olive oil
Instructions
- 1Heat a large nonstick skillet over medium-high and add the olive oil, swirling to coat.
- 2Add the corn kernels and cook without stirring for 3 minutes until the bottoms char and smell sweet and smoky.
- 3Stir once, cook 1 more minute, then transfer the charred corn to a large mixing bowl to cool slightly.
- 4In a small bowl, stir together the mayonnaise, sour cream, lime juice, chili powder, smoked paprika, garlic powder, and salt until smooth and pale orange.
- 5Add the diced chicken to the bowl with the charred corn, then pour in three-quarters of the lime crema and toss until every piece is coated.
- 6Fold in the crumbled cotija and chopped cilantro so the cheese stays in distinct salty bits.
- 7Warm the tortillas one at a time in a dry skillet for 20 seconds per side until pliable and lightly toasted.
- 8Lay each tortilla flat, place shredded lettuce down the center, and mound the street-corn chicken salad on top.
- 9Drizzle the remaining crema over the filling, then fold in the sides and roll tightly into a burrito-style wrap.
