Ingredients

  • 5 oz mixed baby greens or butter lettuce
  • 6 oz cold-smoked salmon
  • 1/2 English cucumber
  • 1 ripe avocado
  • 4 radishes
  • 2 Tbsp thinly sliced red onion
  • 2 Tbsp drained capers
  • 1 1/2 Tbsp everything bagel seasoning
  • 1/3 cup plain Greek yogurt or whipped cream cheese
  • 2 Tbsp fresh lemon juice
  • 1 tsp Dijon mustard
  • 1/2 tsp honey
  • 2 Tbsp extra-virgin olive oil
  • 2 Tbsp chopped fresh dill
  • 1/4 tsp kosher salt
  • 1/4 tsp black pepper
  • 1 cup toasted bagel chips or rye croutons

Instructions

  1. 1Whisk Greek yogurt (or softened whipped cream cheese), lemon juice, Dijon, honey, olive oil, half the dill, salt, and pepper until smooth and pourable; thin with a teaspoon of water if needed for drizzling.
  2. 2Arrange mixed greens on two wide plates or shallow bowls as the base.
  3. 3Thinly slice cucumber into half-moons and radishes into rounds; fan avocado slices. Nestle cucumber, radish, and avocado over the greens.
  4. 4Drape smoked salmon in loose folds across each salad so it looks abundant rather than flat. Scatter red onion and capers evenly.
  5. 5Spoon or drizzle the lemon-dill yogurt dressing over both salads in ribbons.
  6. 6Sprinkle everything bagel seasoning generously over the salmon and avocado so you get that classic bagel crunch and flavor in every bite.
  7. 7Tuck bagel chips or rye croutons the edges and finish with remaining fresh dill and a crack of black pepper.
  8. 8Serve immediately with extra lemon wedges. For a work pack, keep dressing, chips, and avocado separate and assemble just before eating.
