Ingredients
- 1 lb ground lamb or ground beef
- 1/2 small yellow onion, grated
- 3 garlic cloves, minced
- 2 tsp dried oregano
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1 tsp salt
- 1/2 tsp black pepper
- 4 pita breads or flatbreads
- 1 cup cucumber, diced
- 1 cup tomato, diced
- 1/4 cup red onion, thinly sliced
- 3/4 cup plain Greek yogurt
- 1 tbsp lemon juice
- 2 tbsp fresh dill, chopped
- 1 tbsp olive oil
Instructions
- 1Preheat the oven to 425°F and line a rimmed sheet pan with parchment paper or lightly oil it.
- 2In a bowl, combine the ground meat with grated onion, minced garlic, oregano, cumin, smoked paprika, salt, and black pepper; mix just until evenly seasoned.
- 3Press the seasoned meat mixture into a thin, even rectangle about 1/2-inch thick across the prepared sheet pan so it cooks quickly and develops crispy edges.
- 4Drizzle lightly with olive oil and roast 12 to 16 minutes until the meat is browned, cooked through, and the edges look caramelized.
- 5While the meat roasts, stir Greek yogurt with lemon juice, chopped dill, and salt to make a quick tzatziki-style sauce.
- 6Warm the pita or flatbreads in the oven during the last 2 minutes of cooking or wrap them in a clean towel so they stay soft and pliable.
- 7Remove the sheet pan, let the gyro meat rest 2 minutes, then slice or chop it into thin strips with a spatula or knife.
- 8Spread a generous spoonful of the yogurt sauce down the center of each warm pita.
- 9Pile on the chopped gyro meat, diced cucumber, diced tomato, and thin red onion slices.
- 10Fold or roll the wraps tightly, slice in half if desired, and serve immediately or wrap in foil for portable high-protein lunches.
