Ingredients

  • 1.5 cups jasmine rice, uncooked
  • 1 lb ground turkey (93% lean)
  • 2 tbsp toasted sesame oil
  • 1 tbsp fresh ginger, grated
  • 3 garlic cloves, minced
  • 3 tbsp low-sodium soy sauce
  • 3 tbsp rice vinegar
  • 1.5 tbsp honey
  • 1–2 tsp sriracha
  • 2 cups carrots, julienned or matchstick
  • 1 English cucumber, thinly sliced
  • 4 scallions, thinly sliced
  • 2 tbsp toasted sesame seeds
  • 1 avocado, sliced
  • 1 tbsp neutral oil

Instructions

  1. 1Rinse jasmine rice until water runs clear. Cook according to package directions (about 15 minutes simmer plus 10 minutes rest) so grains are fluffy and separate. Fluff with a fork and keep covered.
  2. 2Meanwhile make quick pickles: in a medium bowl whisk rice vinegar, honey, and salt. Toss in julienned carrots and set aside to soften and brighten, stirring once.
  3. 3In a small bowl whisk soy sauce, remaining rice vinegar, remaining honey, sriracha, and sesame oil; set this sauce aside.
  4. 4Heat a large nonstick skillet over medium-high heat and add neutral oil. Add ground turkey and break it up with a wooden spoon; cook 5–6 minutes until no pink remains and edges start to brown.
  5. 5Push turkey to the side, add grated ginger and minced garlic to the empty space, and cook 30 seconds until fragrant. Stir everything together.
  6. 6Pour the prepared soy-honey sauce over the turkey. Simmer 2–3 minutes, stirring, until the sauce thickens and coats the meat in a glossy glaze. Turn off heat and stir in remaining sesame oil.
  7. 7Divide warm rice among 4 bowls. Top each with a generous scoop of sesame ginger turkey, a pile of pickled carrots (drained), cucumber slices, and avocado.
  8. 8Finish with sliced scallions and a heavy sprinkle of toasted sesame seeds. Serve immediately or pack components separately for meal-prep lunches that stay crisp.
