Ingredients
- 1.25 lb boneless skinless chicken thighs
- 4 pita breads
- 2 cups fresh corn kernels

- 1 tsp ground cumin

- 1/2 cup Greek yogurt

- 8 butter lettuce leaves
Instructions
- 1Pat the chicken thighs dry and toss with olive oil, cumin, smoked paprika, and salt. Let them sit 5 minutes while the grill pan heats.
- 2Heat a grill pan or cast-iron skillet over medium-high until it just begins to smoke. Add the chicken and cook 5–6 minutes per side until deep grill marks appear and the internal temperature reaches 165°F.
- 3Transfer the chicken to a cutting board and rest 5 minutes so juices redistribute, then slice thinly against the grain.
- 4While the chicken rests, wipe the pan, add remaining oil, and char the corn kernels 3–4 minutes until blistered in spots. Tip the hot corn into a bowl with the diced tomatoes, red onion, cilantro, juice of one lime, and salt to make a quick relish.
