  • 1 lb ground turkey
  • 2 medium ripe peaches
  • 12 large butter lettuce leaves
  • 4 green onions

  • 1 lime
  • 1/4 cup fresh cilantro

Instructions

  1. 1Heat olive oil in a large nonstick skillet over medium-high heat until it shimmers. Add the ground turkey and break it into small crumbles with a wooden spoon.
  2. 2Cook the turkey, stirring often, until no pink remains and the edges start to brown, 6 to 8 minutes. Drain any excess liquid if the pan looks wet.
  3. 3Stir in the minced ginger and garlic and cook until fragrant, about 45 seconds. The kitchen should smell bright and savory.
  4. 4Dice one peach into small cubes and fold it into the turkey along with the soy sauce, rice vinegar, peach preserves, and sesame oil. Simmer 2 to 3 minutes until the sauce thickens and coats every crumble with a glossy peach glaze.
