  • 1 lb boneless skinless chicken breasts
  • 3 tbsp olive oil
  • 1 tsp kosher salt
  • 1/2 tsp black pepper

  • 8 oz fresh mozzarella balls (ciliegine)

  • 4 cups baby arugula

  • 1 tsp honey

Instructions

  1. 1Pat the chicken dry and season both sides generously with salt and pepper. Heat a large skillet over medium-high heat and add a drizzle of olive oil until it shimmers.
