Ingredients

  • 1.5 lb salmon fillets skin-on or skinless
  • 3 tbsp gochujang paste
  • 2 tbsp soy sauce or tamari
  • 1 tbsp honey or maple syrup
  • 1 tbsp toasted sesame oil
  • 1 tbsp rice vinegar
  • 3 cloves garlic minced
  • 1 tbsp fresh ginger grated
  • 3 cups cooked short-grain or jasmine rice
  • 4 cups baby spinach
  • 1 cup cucumber sliced
  • 1 cup shredded carrots
  • 4 green onions sliced
  • 1 tbsp toasted sesame seeds
  • 4 soft-boiled eggs optional

Instructions

  1. 1Preheat the oven to 400°F and line a sheet pan with foil or parchment. Pat the salmon dry and place the fillets on the pan.
  2. 2In a small bowl whisk gochujang, soy sauce, honey, sesame oil, rice vinegar, minced garlic, and grated ginger into a thick glossy glaze.
  3. 3Brush or spoon most of the glaze over the salmon, coating the tops and sides generously. Reserve a spoonful for drizzling later.
  4. 4Roast the salmon for 12 to 15 minutes until the flesh flakes easily with a fork and the glaze is caramelized at the edges. Internal temperature should reach about 145°F.
  5. 5While the salmon cooks, warm the cooked rice and wilt the baby spinach in a large skillet over medium heat with a splash of water for 1 to 2 minutes until just collapsed.
  6. 6Flake the roasted salmon into large chunks, discarding any skin if preferred. Divide the warm rice among four bowls.
  7. 7Top each bowl with wilted spinach, cucumber slices, shredded carrots, and a generous portion of glazed salmon.
  8. 8Drizzle the reserved gochujang glaze over everything, then scatter green onions and sesame seeds. Add a soft-boiled egg on the side if using for extra muscle-building protein.
