Ingredients
- 14 oz extra-firm tofu, pressed
- 3 Tbsp white or yellow miso paste
- 1 Tbsp fresh ginger, grated
- 2 Tbsp soy sauce or tamari
- 1 1/2 Tbsp maple syrup or honey
- 1 Tbsp + 2 tsp rice vinegar
- 2 tsp toasted sesame oil
- 2 Tbsp neutral oil
- 3 cups cooked brown rice or farro
- 1 large English cucumber, thinly sliced
- 1 tsp sugar
- 3/4 tsp, divided kosher salt
- 2 cups shredded red cabbage
- 1 cup shredded carrots
- 1 cup edamame, shelled
- 3 scallions, sliced
- 1 Tbsp toasted sesame seeds
- 4 lime wedges
Instructions
- 1Press tofu 15 minutes between towels under a heavy pan, then pat very dry and tear into rustic 1-inch bite-size chunks (torn edges crisp better than neat cubes).
- 2Whisk miso, grated ginger, soy sauce, maple syrup, rice vinegar, and sesame oil into a thick glaze; set aside half for drizzling later.
- 3Toss tofu with remaining glaze and neutral oil. Heat a large nonstick skillet over medium-high; add remaining oil.
- 4Cook tofu in a single layer 3–4 minutes without moving until deep golden on the bottom. Flip and cook another 3–4 minutes until crispy on most sides.
- 5Reduce heat to medium-low, pour the rest of the cooking glaze over the tofu, and toss 30–60 seconds until sticky and lacquered. Remove from heat.
- 6Quick-pickle cucumbers: toss slices with rice vinegar, sugar, and salt; let sit 10 minutes while you assemble, then drain lightly.
- 7Warm the cooked grains if cold. Divide rice or farro among 4 bowls. Arrange crispy miso tofu, red cabbage, carrots, edamame, and pickled cucumbers in sections.
- 8Drizzle reserved miso-ginger sauce over everything, then top with scallions and sesame seeds. Serve with lime wedges for a bright squeeze at the table—excellent cold or room-temp for desk lunches.
