Ingredients

  • 1 lb raw shrimp, peeled and deveined
  • 1½ cups fresh sweet corn kernels
  • 2 cups heirloom tomatoes, chopped
  • 1 medium white onion, diced
  • 4 garlic cloves, minced
  • 2 chipotle peppers in adobo, minced
  • 1 tbsp adobo sauce from can
  • 5 cups chicken broth
  • 2 lime, juiced
  • 1 tsp ground cumin
  • ½ tsp dried oregano
  • 2 tbsp olive oil
  • 1 tsp kosher salt
  • ½ cup fresh cilantro, chopped
  • 1 avocado, diced
  • 1 cup tortilla strips or crushed tortilla chips

Instructions

  1. 1Pat the shrimp dry and season lightly with salt. Heat olive oil in a large soup pot over medium-high heat.
  2. 2Add the shrimp in a single layer and sear just until pink and lightly curled, about 1 to 2 minutes per side; transfer to a plate so they do not overcook.
  3. 3In the same pot, add the remaining oil and the diced onion. Cook until softened and lightly golden at the edges, 4 to 5 minutes.
  4. 4Stir in the minced garlic, chipotle peppers, adobo sauce, cumin, and oregano; cook 1 minute until the kitchen smells smoky and fragrant.
  5. 5Add the chopped heirloom tomatoes and cook 3 minutes, pressing some with the back of a spoon so they release juices and begin to break down.
  6. 6Pour in the chicken broth and fresh corn kernels. Bring to a lively simmer, then reduce heat and cook uncovered for 10 minutes so the flavors marry and the corn sweetens the broth.
  7. 7Return the seared shrimp to the pot along with the juice of both limes. Warm through for 1 to 2 minutes only; the shrimp should stay tender.
  8. 8Ladle into bowls, top with diced avocado, chopped cilantro, and crisp tortilla strips. The soup is bright, smoky, and ready in under 30 minutes—perfect for cooler lunch breaks.
