Ingredients
- 1.25 lb lean beef chuck or sirloin
- 12 small corn tortillas
- 3 dried guajillo chiles
- 1 tbsp chipotle in adobo
- 2.5 cups beef broth
- 1 medium white onion
- 4 garlic cloves
- 1 tbsp apple cider vinegar
- 1 tsp ground cumin
- 1 tsp dried oregano
- 1 bay leaf
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 cup fresh cilantro
- 1 lime lime wedges
- 1/2 cup reduced-fat shredded cheese or queso fresco
Instructions
- 1Stem and seed the dried guajillos. Toast them briefly in a dry skillet over medium heat until fragrant, 30–45 seconds per side, then soak in hot water 10 minutes until pliable.
- 2Blend the softened chiles with chipotle, half the onion, garlic, vinegar, cumin, oregano, salt, pepper, and broth until completely smooth.
- 3Cut beef into large chunks. Place in a pot or Instant Pot-style vessel, pour the chile sauce over, add remaining broth and bay leaf. Bring to a simmer.
- 4Cover and cook on low until beef shreds easily with two forks, about 75–90 minutes on the stovetop (or 35 minutes high pressure if using a pressure cooker). Skim excess fat if desired for a lighter consommé.
- 5Remove beef, shred finely, and moisten with a few spoonfuls of the cooking liquid so it stays juicy but not greasy. Keep the strained consommé warm for dipping.
- 6Warm tortillas on a dry skillet or comal until pliable and lightly spotted. For a light classic-swap finish, lightly brush one side with a little consommé instead of frying in fat.
- 7Fill each tortilla with shredded beef and a sprinkle of cheese. Fold and briefly crisp on the skillet if you want a light taco shell edge, 30–45 seconds per side.
- 8Serve three tacos per plate with a small cup of clear consommé on the side for dipping. Top with diced remaining onion, cilantro, and a squeeze of lime.
