- 2 (15 oz) cans canned chickpeas
- 1 large English cucumber
- 1.5 cups cherry tomatoes
- 1/4 cup finely diced red onion
- 1/2 cup chopped fresh parsley
- 2 tbsp chopped fresh dill
- 1/2 cup crumbled feta cheese
- 3 tbsp extra-virgin olive oil
- 3 tbsp fresh lemon juice
- 1 minced garlic clove
- 1 tsp dried oregano
- 3/4 tsp salt
- 1/2 tsp black pepper
- 4 cups baby spinach or mixed greens
- optional for serving whole-wheat pita or lettuce cups
Instructions
- 1Drain and rinse the chickpeas thoroughly. Pat them dry with a clean towel so the dressing clings better.
- 2Place chickpeas in a large bowl. Using a fork or potato masher, smash half of them roughly, leaving plenty of whole beans for texture.
- 3Dice the cucumber into small cubes and halve the cherry tomatoes. Add both to the bowl along with finely diced red onion.
- 4Whisk olive oil, lemon juice, minced garlic, oregano, salt, and pepper in a small jar until emulsified.
- 5Pour the dressing over the chickpea mixture and toss well so every piece is coated. Fold in chopped parsley and dill.
- 6Gently stir in crumbled feta so it stays in distinct salty pockets rather than dissolving completely. Taste and add more lemon or salt if needed.
- 7For immediate lunch, spoon the smashed chickpea salad over a bed of baby spinach or stuff into warm pita.
- 8For meal-prep, portion into airtight containers with greens packed separately; the salad keeps 3–4 days and actually improves as flavors meld.
