- 1.25 lb sirloin steak
- 3 tbsp unsalted butter
- 5 garlic cloves, minced
- 3 tbsp fresh parsley, chopped
- 1 tsp smoked paprika
- 1 tsp salt
- 3/4 tsp black pepper
- 1 tbsp olive oil
- 4 cups baby arugula
- 1 lemon wedges
- 1/4 tsp red pepper flakes
Instructions
- 1Trim any large fat pieces from the sirloin and cut the steak into even 1-inch cubes so they cook quickly and stay tender. Pat the cubes very dry with paper towels; dry surfaces are essential for a good sear.
- 2Season the steak cubes generously on all sides with salt, black pepper, and smoked paprika, tossing so every piece is coated. Let them sit 5 minutes at room temperature while the pan heats.
- 3Heat a large cast-iron or heavy stainless skillet over high heat until very hot, then add the olive oil and swirl to coat. Working in two batches if needed to avoid crowding, sear the steak bites 1 to 2 minutes per side until deeply browned with a crust.
- 4Transfer the seared bites to a clean plate; they should still be medium-rare inside. Reduce the heat to medium-low and add the butter to the same pan.
- 5Once the butter melts and foams, stir in the minced garlic and cook 45 to 60 seconds until fragrant and just golden, scraping up any browned bits from the steak.
