Ingredients

  • 1 lb ground pork
  • 1 tbsp sesame oil
  • 4 garlic cloves, minced
  • 1 tbsp fresh ginger, grated
  • 14 oz bag coleslaw mix (shredded cabbage and carrots)
  • 1/4 cup low-sodium soy sauce or coconut aminos
  • 1 tbsp rice vinegar
  • 1 to 2 tsp sriracha or chili garlic sauce
  • 5 green onions, sliced
  • 1 tbsp toasted sesame seeds
  • 1/4 tsp kosher salt
  • 1/4 tsp black pepper
  • 1 tbsp avocado oil

Instructions

  1. 1Heat a large deep skillet or wok over medium-high heat and add the avocado oil. When hot, add the ground pork and break it apart with a wooden spoon.
  2. 2Cook the pork 5 to 6 minutes, stirring occasionally, until no pink remains and the edges begin to crisp and brown. Season lightly with salt and pepper.
  3. 3Push the pork to one side of the pan and add sesame oil to the empty space. Stir in minced garlic and grated ginger and cook 30 to 45 seconds until fragrant but not burned.
  4. 4Add the entire bag of coleslaw mix to the skillet. Toss everything together so the cabbage starts to wilt and pick up the pork drippings.
  5. 5Pour in the soy sauce or coconut aminos, rice vinegar, and sriracha. Continue stir-frying 4 to 5 minutes, tossing often, until the cabbage is tender-crisp and most liquid has reduced into a glossy coating.
  6. 6Taste and adjust heat or salt as needed. The mixture should smell savory and slightly sweet with a gentle chili kick.
  7. 7Remove from heat and fold in most of the sliced green onions, saving some for garnish. Let the skillet rest 1 minute so flavors settle.
