- 1 lb ground pork
- 1 tbsp coleseed oil or avocado oil
- 3 garlic cloves, minced
- 1 tbsp fresh ginger, grated
- 14 oz bagged coleslaw mix
- 3 tbsp soy sauce or coconut aminos
- 1 tbsp toasted sesame oil
- 1 tbsp rice vinegar
- 1 to 2 tsp sriracha or chili garlic sauce
- 4 green onions, sliced
- 1 tbsp sesame seeds
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- 1Heat a large deep skillet or wok over medium-high heat and add the oil until it shimmers.
- 2Add the ground pork, breaking it into small crumbles with a wooden spoon; season lightly with salt and pepper and cook 6 to 8 minutes until no pink remains and edges start to crisp.
- 3Stir in the minced garlic and grated ginger and cook 30 to 60 seconds until fragrant, being careful not to burn them.
- 4Pile in the entire bag of coleslaw mix and toss continuously so the cabbage wilts evenly and picks up the pork flavor, about 4 to 5 minutes until tender-crisp.
- 5Pour in the soy sauce or coconut aminos, toasted sesame oil, rice vinegar, and sriracha; stir well so the sauce coats every strand of cabbage and the pork.
- 6Continue cooking 1 to 2 more minutes until the liquid reduces slightly and the mixture smells like a classic egg-roll filling.
- 7Taste and adjust heat or salt; the bowl should be savory, slightly spicy, and deeply aromatic.
- 8Remove from heat and fold in most of the sliced green onions, saving a handful for garnish.
