- 1.25 lb boneless skinless chicken breasts
- 4 large romaine lettuce hearts
- 2 ripe avocados
- 1/2 cup grated Parmesan cheese
- 1/3 cup mayonnaise
- 2 tbsp fresh lemon juice
- 1 tsp Dijon mustard
- 1 tsp garlic powder
- 1 tsp anchovy paste
- 2 tbsp olive oil
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 1/2 tsp smoked paprika
Instructions
- 1Pat the chicken dry and season both sides evenly with salt, pepper, garlic powder, and smoked paprika. Let it sit at room temperature for a few minutes while the pan heats.
- 2Heat a large skillet over medium-high heat and add the olive oil until it shimmers. Lay the chicken in a single layer and sear without moving for 5 to 6 minutes until deeply golden.
- 3Flip the chicken, reduce heat to medium, and cook another 5 to 7 minutes until the internal temperature reaches 165°F and juices run clear. Transfer to a cutting board and rest 5 minutes.
- 4While the chicken rests, whisk mayonnaise, lemon juice, Dijon, anchovy paste, and black pepper in a bowl until smooth and creamy. Taste and adjust seasoning if needed.
- 5Separate and wash the romaine leaves, then pat completely dry so the dressing clings. Arrange 3 to 4 sturdy leaves in each serving bowl to form a crisp nest.
- 6Dice the avocados into bite-size cubes and fold half of them gently into the Caesar dressing so they stay chunky.
