  • 1.5 cups long-grain rice, rinsed
  • 1.5 cups canned crushed tomatoes
  • 1 red bell pepper, chopped
  • 1 yellow onion, diced
  • 3 garlic cloves, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp tomato paste
  • 1 tsp curry powder
  • 1.5 tsp smoked paprika
  • 1 tsp dried thyme
  • 1 bay leaf
  • 2.5 cups vegetable broth
  • 2 cups frozen mixed vegetables
  • 1 scotch bonnet or jalapeño, whole
  • 2 tbsp olive oil
  • 1.25 tsp kosher salt
  • 1/4 cup fresh cilantro or parsley for garnish
  • 4 lime wedges

Instructions

  1. 1Heat olive oil in a wide heavy pot or deep skillet over medium heat; add diced onion and cook 4 minutes until translucent.
  2. 2Stir in chopped red bell pepper, minced garlic, and grated ginger; cook another 2 minutes until fragrant.
  3. 3Add tomato paste, curry powder, smoked paprika, and thyme; cook 1 minute to toast the spices and deepen the color.
  4. 4Pour in crushed tomatoes and vegetable broth, then add the rinsed rice, bay leaf, whole scotch bonnet, and salt; stir once.
  5. 5Bring to a gentle boil, then reduce heat to low, cover tightly, and simmer 18 minutes without lifting the lid.
  6. 6Scatter the frozen mixed vegetables over the rice in the final 5 minutes of cooking so they steam through.
