Ingredients

  • 3 cups cooked short-grain rice
  • 6 large eggs
  • 8 oz chicken thigh, diced small
  • 1/2 cup yellow onion, finely chopped
  • 1 cup frozen mixed vegetables
  • 3 tbsp ketchup
  • 1 tbsp soy sauce
  • 2 tbsp butter
  • 1 tbsp neutral oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp parsley, chopped

Instructions

  1. 1Heat butter and the oil in a large nonstick skillet over medium heat. Add the diced chicken and cook until lightly browned and cooked through, about 5 minutes.
  2. 2Add the chopped onion and frozen mixed vegetables; sauté until the onion softens and the vegetables are hot, about 3–4 minutes.
  3. 3Stir in the cooked rice, breaking up any clumps. Add ketchup, soy sauce, salt, and pepper; toss until the rice turns evenly pink-orange and glossy, about 2 minutes. Taste and adjust seasoning. Divide the fried rice into three portions and keep warm.
  4. 4Wipe the skillet clean. For each omelette, beat two eggs with salt until fully blended and slightly frothy.
  5. 5Melt a small knob of the remaining butter in the skillet over medium-low heat. Pour in one portion of beaten eggs and swirl to form a thin, even layer.
  6. 6As the edges set, gently push them toward the center with a spatula while tilting the pan so uncooked egg flows underneath; cook until just set but still soft and custardy on top, about 1–2 minutes.
  7. 7Slide the soft omelette onto a plate, place one portion of the ketchup rice in the center, and fold both sides of the omelette over the rice to form a neat football shape.
  8. 8Repeat the omelette process for the remaining two portions.
  9. 9Transfer each omurice to a lunch-box compartment. Optionally drizzle a thin line of ketchup on top in a zigzag and sprinkle with chopped parsley.
  10. 10Let cool slightly before closing the lids; these hold well for work or school lunches and reheat gently in the microwave if desired.
