- 12 oz shredded cooked turkey breast
- 2 ripe peaches
- 2, thinly sliced celery stalks
- 1/3 cup chopped toasted almonds
- 1/3 cup mayonnaise
- 2 tbsp plain Greek yogurt
- 2 tbsp plus extra for drizzling hot honey
- 1 tsp Dijon mustard
- 1 tsp apple cider vinegar
- 3/4 tsp kosher salt
- 1/4 tsp freshly ground black pepper
- 4 large flour tortillas
- 8 butter lettuce leaves
- 1/2 cup crushed tortilla chips
Instructions
- 1Dice the peaches into 1/2-inch pieces and place them in a large bowl with the shredded turkey, sliced celery, and most of the toasted almonds.
- 2In a small bowl whisk the mayonnaise, Greek yogurt, hot honey, Dijon, apple cider vinegar, salt, and pepper until creamy and balanced between sweet heat and tang.
- 3Pour the dressing over the turkey mixture and fold gently until every piece is coated; taste and add another drizzle of hot honey if you want more heat.
- 4Warm the flour tortillas for 15 seconds in the microwave or in a dry skillet so they become pliable and easy to roll.
- 5Lay two butter lettuce leaves down the center of each tortilla to create a moisture barrier.
- 6Spoon a generous portion of the hot-honey turkey-peach salad down the middle of the lettuce.
- 7Sprinkle crushed tortilla chips and the remaining almonds over the filling for maximum crunch, then drizzle a final thin ribbon of hot honey.
