Ingredients
- 4 large flour tortillas
- 12 oz sliced roasted turkey breast
- 1 large Honeycrisp apple, thinly sliced
- 4 oz sharp cheddar cheese, sliced
- 8 cooked bacon strips
- 8 romaine lettuce leaves
- 1 large ripe tomato, thinly sliced
- 3 tbsp mayonnaise
- 1 tbsp Dijon mustard
- 1 tsp fresh lemon juice
- ¼ tsp black pepper
Instructions
- 1In a small bowl, stir together the mayonnaise, Dijon mustard, lemon juice, and black pepper until smooth to make a quick club spread.
- 2Lay the flour tortillas flat on a clean work surface. Spread a thin, even layer of the mustard-mayo mixture across the center of each tortilla, leaving a one-inch border.
- 3Layer two romaine leaves down the middle of each tortilla, followed by an even portion of the sliced turkey.
- 4Arrange thin Honeycrisp apple slices and cheddar cheese over the turkey so every bite gets sweet crunch and melt.
- 5Add two bacon strips and a few tomato slices to each wrap.
- 6Fold the bottom edge of the tortilla up over the filling, then fold in the sides and roll tightly away from you to form a secure burrito-style wrap.
- 7Slice each wrap in half on the diagonal if desired. Wrap tightly in parchment or beeswax wrap for lunchboxes; they hold well for 4 to 5 hours chilled.
- 8Serve immediately or pack with an ice pack. The crisp apple stays bright and the flavors meld nicely by midday.
