  • 3 cups cooked rotisserie chicken
  • 1 large Honeycrisp apple
  • 2 celery stalks
  • 1/2 cup red grapes
  • 1/2 cup plain Greek yogurt
  • 3 tbsp mayonnaise
  • 1 tbsp Dijon mustard
  • 1 tbsp lemon juice
  • 2 tbsp fresh dill
  • 2 medium heirloom tomatoes
  • 8 slices whole-grain sandwich bread
  • 8 butter lettuce leaves
  • 3/4 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/4 cup sliced almonds

Instructions

  1. 1Shred the rotisserie chicken into bite-size pieces, discarding skin and bones, and place in a large bowl.
  2. 2Core and dice the Honeycrisp apple into small cubes, leaving the skin on for color and crunch. Thinly slice the celery and halve the grapes.
  3. 3Add apple, celery, grapes, and sliced almonds to the chicken.
  4. 4In a separate bowl whisk Greek yogurt, mayonnaise, Dijon, lemon juice, chopped dill, salt, and pepper until smooth and creamy.
  5. 5Pour the dressing over the chicken mixture and fold gently until everything is evenly coated. Taste and adjust seasoning; the salad should taste bright and lightly tangy.
  6. 6Toast the bread slices lightly if desired for sturdiness, or leave soft. Lay butter lettuce leaves on four slices.
  7. 7Spoon a generous mound of apple chicken salad onto the lettuce. Top each with two thick slices of ripe heirloom tomato and salt and pepper on the tomato.
