Ingredients

  • 4 large whole-wheat or spinach tortillas
  • 12 oz sliced roasted turkey breast
  • 6 oz sharp cheddar, thinly sliced
  • 1 large crisp apple (Honeycrisp or Granny Smith)
  • 2 cups baby spinach
  • 3 tbsp Dijon mustard
  • 2 tbsp honey
  • 2 tbsp mayonnaise
  • 1 tsp apple cider vinegar
  • 1/3 cup roasted salted almonds, roughly chopped
  • 1 tsp fresh thyme leaves (optional)
  • 1/2 tsp black pepper

Instructions

  1. 1In a small bowl whisk together Dijon mustard, honey, mayonnaise, apple cider vinegar, and black pepper until smooth and emulsified. Taste; it should be tangy-sweet with a gentle kick.
  2. 2Core the apple and slice it into very thin matchsticks or half-moons so they stay crisp and don’t make the wrap soggy. Toss apple pieces with a tiny splash of the honey-mustard sauce to prevent browning.
  3. 3Lay tortillas on a clean surface. Spread about 1½ tablespoons of honey-mustard sauce evenly over each tortilla, leaving a ½-inch border.
  4. 4Layer turkey slices down the center of each tortilla, slightly overlapping. Top turkey with cheddar slices so the cheese will soften slightly from the meat’s residual coolness.
  5. 5Add a small handful of baby spinach, a quarter of the dressed apple sticks, and a sprinkle of chopped almonds and thyme if using. The almonds give welcome crunch against the soft cheese and turkey.
  6. 6Fold the left and right sides of the tortilla inward over the filling, then roll tightly from the bottom up, keeping pressure even so the wrap holds a compact cylinder shape.
  7. 7If packing ahead, wrap each roll snugly in parchment paper and then foil; refrigerate up to 24 hours. The flavors meld and the cheddar softens beautifully.
