Ingredients

  • 12 small corn tortillas
  • 2 cans (15 oz each) canned black beans rinsed and drained
  • 2 tbsp olive oil
  • 1.5 tsp ground cumin
  • 1.5 tsp chili powder
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp kosher salt
  • 2 tbsp lime juice
  • 3/4 cup cotija or feta cheese crumbled
  • 1/2 cup plain Greek yogurt or light sour cream
  • 2 cups shredded cabbage or slaw mix
  • 1 large avocado sliced
  • 1/3 cup fresh cilantro
  • to taste hot sauce

Instructions

  1. 1Preheat a large cast-iron skillet or griddle over medium-high heat and lightly brush with oil.
  2. 2In a bowl, mash the black beans with cumin, chili powder, smoked paprika, garlic powder, salt, and lime juice until chunky but spreadable. Taste and adjust seasoning so the filling is bold.
  3. 3Warm each tortilla for about 20 seconds per side until pliable, then spoon a thick layer of the smashed bean mixture into the center and gently press it flat so it covers most of the tortilla.
  4. 4Place the filled tortillas bean-side down in the hot skillet. Cook 2 to 3 minutes without moving until the beans form a crispy, deeply browned crust.
  5. 5Flip carefully with a spatula and cook the tortilla side another 1 to 2 minutes until lightly toasted and sturdy enough to hold toppings.
  6. 6Transfer smashed tacos to a plate. Immediately scatter crumbled cotija over the hot bean surface so it softens slightly.
  7. 7Top each taco with a spoonful of Greek yogurt, shredded cabbage, avocado slices, and torn cilantro.
  8. 8Finish with a squeeze of lime and a few dashes of hot sauce. Serve three tacos per person for a filling midday plate that stays crisp.
  9. 9For meal prep, keep the smashed bean base and toppings separate; re-crisp tortillas in a dry skillet just before packing lunch.
