Ingredients
- 1.25 lb boneless skinless chicken breast, cubed
- 1.5 cups low-fat cottage cheese
- 1 cup reduced-fat shredded Mexican cheese blend
- 4 oz canned diced green chiles, drained
- 2 tbsp taco seasoning
- 1 tsp garlic powder
- 1 tbsp olive oil
- 1 cup black beans, rinsed and drained
- 1 cup fresh pico de gallo
- 3 cups shredded romaine or cabbage
- 1/4 cup fresh cilantro, chopped
- 4 lime wedges
- 3/4 tsp kosher salt
- 1/2 tsp black pepper
Instructions
- 1Pat chicken cubes dry and toss with taco seasoning, garlic powder, salt, and pepper until evenly coated.
- 2Heat olive oil in a large nonstick skillet over medium-high heat; add chicken in a single layer and sear 4 to 5 minutes, stirring once, until golden and cooked through to 165°F.
- 3While chicken cooks, blend cottage cheese in a food processor or with an immersion blender until completely smooth and creamy like queso base.
- 4Transfer the smooth cottage cheese to a small saucepan over low heat; stir in shredded Mexican cheese and green chiles until melted and silky, about 3 minutes—do not boil.
- 5Warm the black beans briefly in the microwave or a small pan so they are hot for assembly.
- 6Divide shredded romaine or cabbage among four bowls as the crisp base.
- 7Top each bowl with seasoned chicken, a generous scoop of the warm high-protein queso, and black beans.
- 8Spoon fresh pico de gallo over the top and finish with chopped cilantro.
- 9Squeeze a lime wedge over each bowl just before eating to brighten the rich dip.
- 10Pack leftovers in meal-prep containers with queso stored separately and reheat gently for work lunches that stay high-protein all week.
